Kitchen Staples: Hummus

I was really surprised how difficult it is to find hummus here. You can get it at the farmers market, where they always have a stall with lots of dips. but I haven’t seen it in any supermarkets. In Edinburgh you could buy it everywhere, even with lots of different flavours. Oh well, it tastes best home made anyway, and luckily we have many Turkish shops in our neighbourhood which sell Tahini and chickpeas (chickpeas being another thing that’s almost impossible to find in a regular supermarket here) so we just make our own now.

Ingredients:

  • 200g tinned chickpeas (drained weight)
  • 100g tahini
  • 2 crushed garlic cloves
  • 3 tablespoons olive oil
  • 3 tablespoons water
  • 1 tablespoon lemon juice 
  • pinch of salt

Directions:

Blend everything together in a food processor until creamy. Easy!
